Dear Friends,

 

The warmer winter weather has waterfalls flowing at their fullest and the early spring flowers blossoming.  The purple and white crocuses are showing their vibrant colors.  Also, we know spring is just round the corner as college breaks are happening.  Guests are scheduling mother-daughter getaways and family fun time.  And, beginning next week, we will be open for lunch daily from 11:30am-1:30pm as well as offering our new spring dinner menu.

 

Office FaceliftThe Office/Check-In area received a facelift in February.  Also, new furniture arrived for the RedBud and Hickory Hollow cabins.  Next week, Terry and Steve begin a full renovation of the Strong Wolf cabin.  It will be closed down most of March.

 

 

 

Nicole McCabe Guest Services ManagerAfter several weeks of interviewing, we decided to promote from within for our Guest Services Manager position.  We are excited that Nicole McCabe has joined our team fulltime.  Some of our guests have had the pleasure of receiving a massage from Nicole and others have seen her friendly face at check in.

Parties for our staff continue!!  Check out these photos of our “cooks dinner” at the Lodge at Hideaway Hills.  Also, a majority of our staff enjoyed dinner and a tour at Glenlaurel.  Look at these in our photo gallery.

Congratulations to Courtney Yoakum from Columbus, OH.  She won our vacation giveaway at the AAA Vacation Show in January.  Courtney won a FREE weeknight stay and hearty breakfast.

From Randy, our Spa Manager, here are some good tips for would-be spa goers.
When coming for your spa treatment, it is always best not to wear an excessive amount of make-up of perfume.

While some guests prefer to schedule an appointment for someone else and “surprise them”, sometimes it is not the best idea.  Occasionally, a “surprise massage” is not as well accepted as the giver had hoped.  If you want to surprise them, I suggest you give them some forewarning so they can mentally prepare and be relaxed when they arrive.

Chef Anthony at The Hills Market

At the Inn we are very pleased to be lending our own Chef Anthony to The Hills Market next week for an evening of instruction and delicious food!

Join us on Wednesday, January 11 at 6:30pm and learn how to prepare these favorites from the Inn, all featuring Canal Junction Cheese. Start the evening with an hour in the kitchen as Chef Anthony prepares Twice-Baked Wabash Erie Canal Souffle, Pan Seared Halibut with Portobello Risotto, Lock 21, and Scallion Oil, and Black Walnut & Charloe Cheesecake. Then move to the Wine Department, where you’ll enjoy each of these delicious items, complete with wine pairings, of course!

Wow, spring moved right past us! And, into a warm start of summer. Innkeeper Terry say’s that’s great for our newest endeavor… BEES.

Mid May, the bees arrived. Terry has four active hives located in a private area beyond the hammocks. While it will take a year until we can process the honey, the bees are active and thriving.  Honey combs are already in the making.The honey will be used in the restaurant, for spa facials and sold in the gift shop.

Rooftop Garden
The finishing touches are being added to the Rooftop Garden. The flowers are blooming and Chef Anthony is already harvesting two types of lettuce. Innkeeper Terry designed and built the gazebo. Gardeners Kellie and Scott made it look gorgeos with plantings. It’s the perfect setting for star gazing, swinging with your loved one, hosting small weddings or renewing your marriage vows.

If you live in Columbus, watch us this Sunday, June 12, Channel 6 at 9am on Deal Detectives.  They are featuring the Hocking Hills and we will be in it too.  If you miss it, go to Deal Detectives after Sunday and you can see it.   Also, we were featured in Ohio Magazine in the June issue.  The article focuses on two packages.  One for the Washboard Festival and the other for Outdoor Adventure.  Click here for more info.

The Inn At The Hills Market

Chef Anthony, joined by Innkeeper Ellen and Sous Chef Gerard, recently taught one of the Inn’s very popular cooking classes at The Hills Market in Columbus.

Attendees were treated to a full cooking demonstration, followed by a delicious four-course meal paired with incredible beers from Rockmill Brewery out of Lancaster, Ohio. The menu included Crab Cakes with Citrus Aioli paired with Rockmill’s Whitbier (an Organic Wheat Ale),  Duxelle Stuffed Beef Shoulder Tender with Sherry Reduction with Rockmills Dubbel (an Organic Abbey Ale), and Fontina, Sharp Cheddar, and Pecorino Cheeses with Rockmill’s Tripel (an Organic Golden Ale). Good food, good drink, and good company were enjoyed by all!

The Hills Market is a locally-owned specialty grocer, dedicated to providing the best that Ohio has to offer and many of the Ohio foods that are enjoyed around the world were first featured there. The Inn is always excited to pair with the market, and this was certainly no exception!

The Inn is very excited to once again be a part of the Hills Market’s very popular cooking class series! Our own Chef Anthony is featured as the Market’s first presenter of the season!

Join us on Tuesday, January 25, as Chef Anthony and sous chef Gerard prepare a delicious four-course menu to be paired with the incredible beers from Rockmill Brewery out of Lancaster, Ohio. Participants will enjoy watching the creation of their meal before moving to the wine department to experience all of Chef Anthony’s offerings. The menu will include Crab Cakes with Citrus Aioli paired with Rockmill’s Whitbier (an Organic Wheat Ale), Sauteed Pears with Watercress paired with Rockmill’s Saison (an Organic Farmhouse Ale), Duxelle Stuffed Beef Shoulder Tender with Sherry Reduction and Whipped Goat Cheese Mashed Potatoes paired with Rockmill’s Dubbel (an Organic Abbey Ale), and Fontina, Sharp Cheddar and Pecorino Cheeses with Rockmill’s Tripel (an Organic Golden Ale).

Out and About With the Inn & Spa At Cedar Falls

On April 28th, Chef Anthony and Innkeeper Ellen trotted off to Columbus to teach a cooking class at the North Market. With 22 participants and 5 helpers, the evening was delightful. Anthony spent two hours educating and entertaining the class, preparing ‘blackened’ breadsticks, marinated flat iron steak with charred tomato salsa, and citrus-sage custard souffles. The Inn is one of numerous Dine Originals restaurants participating in the cooking class series, and the North Market was so thrilled with the event that they’ve asked Chef Anthony to return in the fall. Chef Anthony At The North Market

If you have enjoyed our cooking classes in the past, or have missed them and regretted it, here is an opportunity that you won’t want to miss!

Our very own Chef Anthony will be leading a Dine Originals Chef Series Class at the very popular North Market’s Dispatch Kitchen on Wednesday, April 28. He will be cooking ‘Blackened Breadsticks’, Marinated Flat Iron Steak with Charred Tomato Salsa, and Citrus-Sage Custard Souffles. All sure to be delicious and a fun time is guaranteed to be had by all!

The class is from 6:30-8:30pm and is only $50 (or you can bring friends and get 3/$125). You can reserve your tickets through the North Market.
