“Chef for a Day” immerses guests in culinary experience

After our “Innkeeper for an Afternoon” offering was a sellout last year, we’ve just added a new “Chef for a Day” program, launched to allow you to try your hand running the Inn kitchen.

Led by Executive Chef Anthony Schulz, you can become chef for a day, with classes taking place from 1-5 p.m. most days by advance reservation.  You’ll enjoy a private, four-hour, one-on-one cooking class, tastings and dinner, plus take home the day’s menu, a copy of an Inn & Spa at Cedar Falls cookbook and apron.

The program takes place in the Inn kitchen, where you’ll help Chef Anthony prepare evening dinner service, while you gain specialized training in everything from prepping veggies to making desserts and properly designing a menu.

Already, Chef for a Day is receiving rave reviews from early attendees like Tod and Mary Beckett of Columbus.

“It was so great that we immediately booked a cooking class with Anthony that the Inn was hosting at Hills Market in Columbus.  And we brought ten friends with us,” Mary said.

“We really did this Tod, who is a foodie, but rarely gets to cook because he works such long hours and I usually do the cooking at home,” she said. “But he just loved it.  It was so great to see him learn to separate an egg.  He had never separated an egg!  He had never made a crème brûlée.  But he learned how and did it all that day at the inn.”

Chef Anthony added that Chef for a Day is a great way to bring couples or friends together, especially if one person cooks and the other does not.

“They experience what it’s really like behind the lines.  Students learn classic technique, but in an approachable way, and they can ask questions along the way.  Then, they enjoy one of the best meals of their lives, while seeing other guests enjoy the meal that they helped prepare. It’s very gratifying for them.”

The Inn hosted two beautiful weddings this weekend. Both ceremonies took place outside, surrounded by the breathtaking beauty of our gardens. Guests then dined in our new Gathering Place, enjoying Chef Anthony’s gourmet dinners.

Congratulations to the Huffman’s and the Henne’s from all of us at the Inn! We wish them much happiness in their new lives together!

Fall Gardens in the Hocking Hills

The Nature of Life at The Inn and Spa At Cedar Falls

The Inn is very pleased to welcome back poet-psychologist Stephen Emerick and his daughter, Yoga instructor and Thai body worker Shawna Emerick. Having led a very popular retreat last year, they have returned to once again lead participants on a journey to deeper self-discovery.

This two day retreat running October 31 – November 2, is designed for those seeking to explore an understanding of the self while nurturing the physical and expanding the lingual. Stephen will share poetry he wrote at the Inn, while Shawna will lead participants through mild Yoga movements and meditation.

Participants will be welcome to share their own expressions of poetry within a supportive and encouraging environment and will receive a copy of Poems from The Inn at Cedar Falls: The Written Word and Poems from Deep Woods: The Written Word.

The Hocking Hills is the perfect place for contemplation and inner reflection. At the Inn, Stephen and Shawna have found a space for exploration of the nature of one’s inner environment and would like to share it with you. Contact the Inn if you would like to be a part of this moving workshop.

Rooftop Gardening in the Hocking Hills

On the roof of the Inn’s new Gathering Place is a little piece of heaven – or at least a piece of heaven in the works.

The Inn’s grounds keepers, Kelly and Scott, have been working to create a Rooftop Garden on top of this new addition to the Inn’s grounds. A green building in itself, the Gathering Place’s roof offers a perfect place for quiet contemplation and beautiful views among carefully selected flowers and garden vegetation.

Surrounded by the lush and beauty of the Hocking Hills State Park, the Inn blends right in to the peace and harmony that can be found in the Hills. Plan a visit and see for yourself. Welcome and Enjoy!

Season of Good Light in the Hocking Hills

Next week the Inn is very excited to welcome back  Jim Crotty, author of many of the gorgeous photographs throughout our website and award-winning photographer.

Jim will be hosting Season of Good Light – Photography Workshop, where participants will have the opportunity to work and learn about the art of nature photography. September in the Hocking Hills, with the cool evenings providing beautiful sunrises and mist-shrouded hollows, is a perfect time to capture the rolling fields, old barns, churches, forest ridgelines, and wildlife with breathtaking photographs, and Jim is going to teach participants just how to do it!

The workshop is open to all skill levels and will include two full days of instruction, creating a careful balance of teaching and practice. Classroom instruction will take place in the Inn’s newly constructed Gathering Place, and will include discussions on operating your digital 35mm SLR camera, film speed settings, white balance, shutter speed, and more. Jim will even go over best practices in the ‘digital darkroom’, file editing and management, preparing files for optimal print-making and web-publishing, as well as best practices for managing a nature photography business, marketing, web sites, and more!

Outdoor experiences will address the importance of learning to see as the artist sees, and understanding and appreciating how placement of subject, form, color, background and foreground alter the visual impact of the nature and landscape photograph. Some of the beautiful places utilized as the ‘outdoor classroom’ include Ash Cave, Conkles Hollow, Old Man’s Cave, and Cedar Falls, just to name a few.

Jim Crotty considers the Hocking Hills to be the home of his ‘creative spirit.’ This workshop will give you the opportunity to see and capture that spirit for yourself. Contact the Inn for more information.

New Fall Menu at The Inn & Spa At Cedar Falls

At the Inn we welcome the fall season with the rolling out of Chef Anthony’s Fall Menu!

Starting with Smoked Duck Flatbread, Scallops & Squash or a salad with our daily House-made Vinaigrette will only leave you wanting more.

Our mouth-watering entree options include Pan Roasted Pork Chop with Pears & Raisins and a Cider Brown Sugar Gastrique, Dijon-Oreganatta Chicken with an Ohio Maple Reduction, Scallops with Haricot Vert & Gnocchi with Herbed Breurre Blanc, or Butternut Squash Ravioli with Sage, Asparagus, Dried Cranberries, Pecans, and a Peppered Parmesan Cream Sauce.

Roasted White Peking Duck Breast with White Bean Ragout, Red Wine, Fennel & Tomatoes, Grilled Peppered Swordfish with Wild Mushroom Risotto, Scallion Oil & Charred Tomato Confit, and our very popular Grilled Filet Mignon with Caramelized Shallots and Pink Peppercorn Demi round out the menu.

Pair these wonderful entrees with wines suggested by Chef Anthony or with any of the more than 50 wines on our wine list. Fall Wine TasteInn at the Inn & Spa At Cedar Falls

Today is the Fall Wine TasteInn with Chef Anthony and if you have not reserved your spot you won’t believe what you are missing!

Diners will start with a Crab-Apple Baguette and a Chasing Venus Sauvignon Blanc from New Zealand. The salad will be Sugar Snaps, Feta & Grapes with Rocket & Champagne Vinaigrette with Peter Lehmann Riesling out of Eden Valley Australia, and the soup will be a Roasted Tomato & Wild Mushroom paired with a Marquis Philips Grenache from South Australia.

For the dinner entree, participants will have a choice of Rosemary & Pine Nut Roasted Rack of New Zealand Lamb with Crushed Tomato Red Wine Sauce or Pan Seared King Barramundi with Capers, Kalamata Olives, Garlic, Paprika, & White Wine. Both options will be paired with Henry’s Drive “Dead Letter Office” Shiraz from South Australia and Oyster Bay Merlot from New Zealand.

If diners have any room left after these delicious entrees, they will enjoy Honey-Almond Cake with Brown Butter Almond Brittle Ice Cream and Campbell’s Muscat from South Australia.

Take a Break in the Hocking Hills

If you could use a midweek break from the daily grind, consider a trip to the Hocking Hills!

On Wednesday, September 15, Hocking Hills Canoe Livery will host a Ladies’ Evening Float Trip from 6:00-9:00pm. Launching from Rockbridge State Nature Reserve, hiking across Ohio’s largest natural rock bridge, and finishing in Enterprise, canoers and kayakers will enjoy the peace and beautiful scenery of the Hocking River.

Continue your time away on Thursday, September 16, when Hocking Hills State Park naturalists will explore Cedar Falls. At 50 feet, this is the largest waterfall in the Hocking Hills region and is one of the park’s most popular natural attractions. Join the naturalists on this afternoon stroll and learn about the unique natural and cultural history of the area.

Finish out your midweek break with a stop at the Thornville Backwoods Fest on September 17. Central Ohio’s finest arts and crafts festival, look for more than 250 crafters from more than six states. Enjoy bluegrass music, kettle-cooked food, and pre-1840′s encampments.
